The Servants Directory Improved by Hannah Glass
Written in 1762, Hannah Glass’ The Servants Directory Improved provides instructions for the Chamber Maid, House Maid, Under Cook, etc. In addition it provides instruction for Cooking and Pickling. Glass wrote mostly for domestic servants (the “lower sort”, as she referred to them), writing in a conversational style familiar to anyone who has learned a recipe at the elbow of a parent or grandparent. The food is surprisingly recognizable. The work is “4 x 7.25” and is bound in a marbled wrap. 62 pp.
